Girls Weekend & Delicious Treats!

So my husband went out of town for the weekend to Hunt some deer! I don't like being alone.. so I invited my stepsisters over! 2 out of the 3 came!!!
I wanted to make sure I had enough treats and goodies for them, because I know when I drink wine I tend to get the munchies so I made Mini Chocolate chip Banana Bread muffins AND Chocolate chip pumpkin cupcakes with a pumpkin cream cheese frosting topped with Chocolate sprinkles.. YUMMY!!


MINI CHOCOLATE CHIP BANANA MUFFINS



Ingredients: 
1 Box of yellow cake mix (sugar free)
2 Eggs or 4 eggs whites
3-4 Overripe bananas
1 cups of Dark Chocolate Chips

Mix it all together with a hand held mixer or a Kitchen Aide Type blender
Then take a tablespoon and fill your tray!

Cook on 350 degrees for 15-20 minutes


CHOCOLATE CHIP PUMPKIN CUPCAKES W/ PUMPKIN CREAM CHEESE FROSTING!


Ingredients:
For the Pumpkin Cupcake Mix
1 Box Cake mix*
2 tsp pumpkin pie spice
1 cup canned 100% pure pumpkin
1 cup water
1 Cup Dark Chocolate chips

For the Pumpkin Cream Cheese Frosting:
8 oz Philadelphia 1/3 fat cream cheese (do not use fat free)
1/2 cup pureed pumpkin (canned is fine)
1 tsp vanilla extract
1 tsp cinnamon
1 tsp pumpkin pie spice
5 tbsp packed brown sugar 




Directions:

Preheat oven to 350°. Line a cupcake tin with cupcake wrappers.
 
Combine cake mix and pumpkin spice in a large bowl. Add pumpkin puree and water, mix about 2 minutes.

Fill cupcake liners 2/3 full and bake about 20 - 25 minutes, or until a toothpick inserted comes out clean.

For the frosting, combine the cream cheese, pumpkin, vanilla, cinnamon, pumpkin pie spice and brown sugar until smooth. You can use a spatula to ice the cupcakes or pipe them which may require making more frosting.
